TASTING NOTES

Refreshing and versatile, showing a bright, radiant pink colour in the glass. Its broad, well-rounded, fragrant bouquet features citrus notes layered over fruity, forest aromas and red berries. A charming, well-balanced palate is bolstered by good acidity and delicate length, evoking the red, mineral-rich soil of the Salento, and the clear, bright air of a September morning in Puglia.

FOOD PAIRINGS

PERFECT WITH MEAT AND GAME PASTA DISHES, AND PUGLIA’S TRADITIONAL MATURE AND PIQUANT CHEESES.

GRAPE VARIETY AND VINIFICATION

Rosé wine is a cornerstone of Puglia’s viticulture, particularly in the Salento area.

In the past, the first grape must that trickled out of the vast stone wine vats would be fermented separately and used to make unbottled rosé wine known as “lagrima” that was kept for drinking at home, and much loved by the rural community.

Today, the classic pink colour is extracted from Primitivo I.G.P grapes through a short maceration of a few hours, followed by fermentation off the skins, and several months of ageing in steel vats.
